PATHAE KA SAAG 2

SERVING SIZE : FOR FOUR PERSONS

INGREDIENTS :
250 GMS OF YELLOW PUMPKIN

1 TSP FENUGREEK SEEDS
1 TSP HALDI POWDER
2 TSP CORIANDER POWDER
1 TSP RED CHILI POWDER 1
1 FINELY CHOPPED GREEN CHILI
1 TSP OF GINGER PASTE
2 TSP OF GHEE
2 TSP OF SALT
1 TBSP OF SUGAR
1 TSP GARAM MASALA
1 TSP MANGO POWDER
RATAN JOT FOR COLOURING

METHOD : –

In a kadhai heat ghee & add to it Ratan jot . Remove the Ratan jot from ghee when the ghee turns bright red. – Cut the pumpkin into medium sized pieces. – Put the ginger , green chili & fenugreek seeds into ghee & allow the to crackle. -Than add Pumpkin pieces in kadai & sprinkle salt , turmeric , coriander , red chili powder on the pumpkin & mix the ingredients well with a spoon .Add around 250 ml of water & than cover the kadai with the lid & allow the pumpkin to cook on medium flame. – After 15 minutes when the Pumpkin pieces are cooked & the water in the kadai has dried add the sugar to it & cook the vegetable on very low flame , stirring the vegetable very lightly so that the sugar does not burn. – Finally add Garam masala & Mango powder to the vegetable & the vegetable is ready for the service. Sweet Pumpkin vegetable can be relished with Parathas , Rotis & Rice.
